Roasted Asparagus

Roasted Asparagus I love asparagus, my entire family loves asparagus.

There are so many different ways to cook this elegant sweet tasting vegetable, along with various sauces that can accompany it.

One of our favorite preparations is probably the easiest, yet the taste is delightful.

 Parmesan cheese

Ingredients: Asparagus bunches

1-2 bunches of Asparagus

Extra Virgin Olive Oil

Hawaiian salt, sea salt or kosher salt- table salt can be used but I prefer the others

Grated Parmesan

 

Directions: 

Preheat oven to 425 degrees

Line a cookie sheet with foil,  not necessary, I like to do it for easier clean up.  In our hectic home we look for every possible way to make things just a little easier.

I hand snap the tough part of the bottoms of my asparagus off, you can cut them if you prefer.  Wash then pat dry, they need to be as dry as possible so that you are roasting them and not steaming them during the cooking process.  Place asparagus nicely in a single layer on the cookie sheet.

Pour a good amount of olive oil in a small bowl, you can always add more if you run out. Take a cooking brush and coat the asparagus from spear to bottom of stem.  Make sure they are fully coated.  Asparagus

Sprinkle with salt, be generous in the amount you use.  Next Lightly sprinkle with Parmesan cheese, you can add more depending on what you’re wanting.  Sometimes I add more cheese then other times.

Pop the asparagus into your preheated oven for about 8-10 minutes depending on thickness of your spears.

Serve and watch your family enjoy this yummy healthy vegetable.  As much as I dislike seeing my kids fight, I totally don’t mind seeing them argue who gets the last of the asparagus :)
