Freezer-Friendly Breakfast Taquito Recipe
We love easy sausage based breakfasts, and this taquito recipe is a great grab and go option. You can easily make these in large batches and freeze for fast breakfasts on busy mornings.
Ingredients for Breakfast Taquito Recipe:
1 package 8 inch flour tortillas
1 package ground sausage – 1 lb (more if you want bigger burritos or more meat0
1 package of hash browns – 3 -4 cups (I use the ones from the dairy section, but frozen is fine too)
12 eggs – you may substitute with egg beaters or egg white. 1/4 cup equals 1 egg
1/4 cup milk
1/4 tsp salt
1/4 tsp pepper
1-2 cups shredded cheese – this depends on how cheesy you want them (I adore tons of cheese) and how thick you want them
Salsa or picante sauce for dipping and even some sour cream
Directions for Breakfast Taquito Recipe:
Preheat oven to 350. Grab a jellyroll pan – this one is my favorite (or a cookie sheet, but a pan with a lip is best) and line with parchment paper and set aside.
In a medium skillet, brown your sausage. Set aside.
Cook your eggs until cooked firm (runny eggs will make the tortillas wet and therefore likely to tear).
Make your hash browns according to package directions.
Heat up a few tortillas in the microwave for 20 seconds (they are easier to roll when they are warm.)
Get all your supplies and either make an assembly line or you can combine all the ingredients in a large bowl.
Place a tortilla in front of you. Put a spoonful of sausage, eggs, hash browns and a sprinkle of cheese, or a large spoonful of the mixture from the bowl.
Roll tightly and put in the jellyroll pan, seam down. Repeat until you fill up the pan, placing the rolled tortillas snugly next to one another.
Bake for 25-30 minutes, or until browned. Serve with your salsa or picante sauce or sour cream and enjoy!
How to Freeze Breakfast Taquito Recipe
Once you have baked your taquitos, you will want to set some aside for the freezer. My method of easily freezing foods is below.
- Allow taquito recipe to cool completely
- Add into a large freezer bag in a single layer.
- Remove air from bag and seal.
- Date and label bag, then place flat in freezer.
- Remove as many as desired, and heat in microwave or oven when ready to eat.
