Ingredients
  • 2cups QuinoaCooked
  • 2cups Fresh Spinach Chopped and packed
  • 1/4cup packed finely chopped parsley leaves
  • 1can Garbanzo Beans
  • 1/3cup Cranberries
  • 1/3 cup Feta Cheese
  • saltto taste
  • Freshly Cracked Pepperto taste
  • 1/2 LemonJuice
  • 1/4Cup olive oil
  • 1tsp Balsamic Vinegar
Instructions
  1. To make the dressing, whisk together the juice of half a lemon, 1/4 Cup olive oil, 1 fat clove of garlic minced, salt and pepper. Add 1 tsp of balsamic vinegar (optional).
  2. In a bowl, take all the ingredients, season with salt and freshly cracked pepper and add a generous drizzle of the dressing.
  3. Mix to combine.
  4. Let it hang out in the fridge for about 30 minutes – this will allow the flavors to mingle and develop. Serve chilled or at room temperature.
