There are so many different things you can add to chili just starting with the meat you put in it. You can even opt for poultry like I did in this recipe. I used ground turkey and NO ONE in my family even knew…. Shhhhhhh!!! Using turkey and chicken cuts down on the fat and grease when cooking so you don’t really need to drain.
Many don’t believe you can add something sweet like pumpkin without it tasting odd. This recipe is ideal for anyone wanting to add some thickening and depth of flavor to their chili recipe without a ton of calories. Pumpkin puree is rich in antioxidants and fiber. That means this is a perfect delicious winter meal!
Ground hamburger or even ground chuck is just as fabulous and so full of yummy flavor with this slow cooker pumpkin chili. If you have fresh sausage or even ground venison, you may prefer using that for extra flavor.
If you’re wanting to kick the spice up a bit adding extra chili powder is totally an option. I’ll sometimes pull some out of the slow cooker once the pumpkin chili has finished cooking, and then put it in a saucepan to add chili powder and cook for about 5 minutes. That way my little ones can enjoy their favorite pumpkin chili and my husband and older son can have that added WOW in theirs. When you’ve got a large brood you have to make it work for everyone.
In this delicious recipe, I used white beans, you can also throw in some chili beans, kidney or any other bean you like. That’s what I love about chili you can change it up, spice it up for whatever mood you’re in or occasion you’re serving it at.
Another fun thing is thinking of adding a starch. Here in Hawaii, we will often serve our Crock Pot Pumpkin Chili or any chili for that matter over steamed white rice…. oh my is that the most comforting food ever! Serving with some delicious cornbread is also a treat. Some even love serving over cooked pasta, or mixing in with macaroni and cheese for a yummy chili mac recipe!
This Slow Cooker Pumpkin Chili makes for amazing leftovers and also freezes exceptionally well so you can double or even triple up the batch for easy weeknight dinners. Do you love to shake things up with your chili? Have you ever made Pumpkin Chili before? If you make this recipe be sure to come let me know what you think.
