How To Make Couscous Vegetable Bowl
No matter the season, vegetables with the perfect seasoning adding in some couscous and lentils and you’ve got yourself a meal that will fill up your family while getting them to eat right. With our busy schedules finding the time to make a well-balanced meal we can all agree upon can be quite the task.
Knowing how to make couscous into this delicious vegetable bowl is something you’ll be so thankful for. I keep couscous in the pantry since it cooks up fast and is easy to adapt to any vegetable or menu need. Living in Hawaii, I have better produce options year round, but that doesn’t mean you can’t also enjoy amazing couscous vegetable bowls with more traditional winter vegetables!
You’ll start out by cooking your couscous until tender. You can also use your favorite pasta and I’ve even made this dish with quinoa and it tastes so good. Begin cooking your lentils until soft. If you are in a hurry you most certainly can use canned lentils.
For the past year, I’ve found the perfect way to cook lentils, it’s super fast and mess free… it’s one of my favorite kitchen must-haves the Instant Pot. I can’t imagine life without it now. Even making a last minute meal like this is easy when you have this on hand in your kitchen.
Steam your broccoli. My family tends to enjoy our vegetables just a speck under cooked so they are nice and crispy still. If you want to create a cold salad with this – you can cook your couscous and then mix with raw vegetables for a salad texture instead.
What’s great about knowing how to make couscous and creating this vegetable bowl is you can add in any vegetables you want, change up the grain to whole wheat, white rice, brown rice or any pasta. You can also steam all your vegetables together or for a nice and different taste throw in your tomatoes and peppers raw. The flavor is huge and YUM!
Fill up one side of your bowl with couscous the other half with your cooked lentils. Layer your favorite veggies to make a fabulous Couscous Vegetable Bowl. You can even make a creamy sauce if you’d like to change it up a bit.
How To Make Couscous Vegetable Bowl
- 1½ Cups roasted red peppers
- 2 Cups broccoli florets
- 2 Cups cherry tomatoes, sliced in half
- 2 Cups lentils, cooked
- 2 Cups couscous
- 2 Tbsps butter
- 1 Tsp salt
- 2 Tsp Garlic Powder
- 2 Tsp Onion Powder
- Pepper to taste
- 1 ½ Cups water
- Set the water to boil with the butter and salt.
- Let it simmer and add the couscous.
- Cover and cook until all the water has been absorbed, and the couscous is tender.
- Steam the broccoli and red peppers for 5-6 minutes. Once done, set them aside to cool down.
- Steam cherry tomatoes for 3-5 depending on how tender you’d like them.
- Fill half of the bowl with the couscous and the other half with the lentils.
- Add garlic powder, onion powder and pepper to steamed veggies
- Add the red peppers, cherry tomatoes, and broccoli.
- Serve and enjoy.
