The other night I made my family Baked Parmesan Chicken. It was delicious, it was so moist and the flavor was perfect.
I prepare this recipe often; I find it easy to prepare and my family enjoys every bite. Here is my recipe for Baked Parmesan Chicken. I hope you enjoy it as much as we do.
8 boneless skinless chicken breasts
1 1/2 – 2 Cups Mayonnaise, depending how thick you want the mayonnaise
1 Cup grated Parmesan
2 Cups Italian seasoned bread crumbs
Preheat oven to 400 degrees.
On a plate scatter a nice layer of the Italian bread crumbs, set to the side.
In a bowl combine mayonnaise and Parmesan until evenly mixed.
Take chicken breasts and dredge through mayonnaise mixture, shake gently so it’s not too thick
Take chicken covered in mayonnaise and place on top of bread crumbs pressing firmly. Flip the piece over and do the same to the other side. You’ll need to keep adding bread crumbs as you go along.
Place chicken breasts in baking dish. You can line with foil to aid in quicker clean up 🙂 Easy clean up is always important. I notice using glass baking dishes makes for really easy clean up.
Once your pieces of chicken are coated put in the oven for 25 minutes or until juices run clear.
This recipe will feed 7-8.
You can also you boneless skinless chicken thighs to make Baked Parmesan Chicken, just be sure to cut the cooking time down by about 5 minutes.
For lighter options for your Baked Parmesan Chicken; you can use light or fat free mayonnaise (I have made a 50/50 combination of regular mayonnaise and fat free and my family hasn’t noticed). You can also use a cooking brush and lightly brush the mayonnaise mixture on instead of dunking chicken into mayonnaise.
